Making Old El Paso Fajita's, Vegetarian Style

Kimmy is a vegetarian and sometimes its hard to find inspiration for us all to eat a meal together. We try to eat a vegetarian meal a couple of times a week so that kimmy feels like she is sharing a meal with us rather than eating separately. When Old El Paso sent us a parcel of meal sets we looked forward to eating together.

We are big Mexican eaters in our house and I always try to buy the milder of meal kits due to Tilly eating the meal with us.

For a vegetarian meal we were sent 8 tortilla wraps, some sour cream and a sachet of Fajita mix.

Instead of using chicken we chopped up some fresh vegetables, not only is this a vegetarian meal but it is also a healthy option to adding meat to the mix. another alternative is to add quorn pieces to the mix. we popped the vegetables into a pan to fry them in a little olive oil. Olive oil is the healthiest option for frying food. It might be a bit more expensive, but it is worth it!

We transferred them to an oven tray and added the fajita mix. Make sure all the food is covered and pop it in the oven. The fajita mix does its stuff and adds the flavouring to your vegetables, once they are done simply add to the tortilla wraps and eat!

Serve with a side salad and sour cream.
