How To Bake A Simple And Delicious Easter Cake

Easter is the perfect time to gather the family and enjoy some baking fun! This easy delicious Easter cake recipe is great for parents and kids to make together. It’s a simple, moist sponge cake decorated with a festive spring theme. Let’s get started!

Ingredients For The Delicious Easter Cake

For the cake, you will need the following ingredients:

  • 225g self-raising flour
  • 225g caster sugar
  • 225g unsalted butter (softened)
  • 4 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp milk

For the buttercream icing you will need:

  • 150g unsalted butter (softened)
  • 300g icing sugar
  • 1-2 tbsp milk
  • Food colouring (optional – pastel colours work great for Easter!)

For decoration:

  • Mini chocolate eggs (e.g., Cadbury Mini Eggs)
  • Shredded coconut or crushed biscuits (to mimic a nest)
  • Edible flowers or sprinkles for a spring touch

How To Make The Delicious Easter Cake

Firstly you will need to preheat your oven to 180°C (160°C fan) or gas mark 4. You will also need to grease and line two 20cm round cake tins with baking paper. Put these aside for later.

In a large mixing bowl, cream the butter and sugar together until light and fluffy. Then add the eggs one at a time. You will need to beat each egg into the batter really well, before adding another one. Stir in your vanilla extract for flavouring. Sift in the flour and baking powder, then fold it gently into the cake mixture. Add the milk to loosen the batter slightly, if you need it.

Get your cake tins and divide the cake mixture between two cake tins. Pop them in the oven and bake for 20 – 25 minutes, check they are cooked through by using a skewer. If it comes out clean, it is cooked. Leave them to cool for 5 minutes and then remove them from the tins. Pop them on a wire rack to cool completely. If you take them out of the tin, whilst they are too hot, they will crumble.

Decorating The Cake

Beat the butter until it is creamy, then gradually add the icing sugar and mix it. Add milk, one tablespoon at a time, until you get a spreadable consistency. If you’d like, mix in a few drops of food colouring to create a pastel shade. You can also add some flavouring if you would like to.

Spread a layer of buttercream on top of one sponge, then sandwich the second sponge on top. Cover the entire cake with a thin layer of buttercream (a crumb coat) and chill for 10 minutes. Spread a thicker layer of buttercream over the cake, smoothing it out with a palette knife.

To decorate the top of the cake, press shredded coconut or crushed biscuits onto the top of the cake to create a nest effect. You can also use shredded Wheat to create nests. Arrange some mini chocolate eggs in the centre of the “nest.” Add some edible flowers or sprinkles around the edges for a festive spring vibe.
