People love homemade goodies, especially if you make them for Christmas gifts. Baking cookies is an inexpensive way of giving a teacher a gift. They also look great if you make some for the PTA bake sale. The chewy butter cookies can be adapted to suit any day over the year. Make them red for Valentine’s Day. Make them green again for St Patrick’s Day. You can also make them pastel colours for Easter celebrations.
To make them into a gift, simply buy some paper bags and stickers online from Amazon. Pop some cookies into the bag and seal them. Make them a day or two before you give them as a gift, so they stay fresher for longer.
Ingredients That You Need
- 2 ½ cups of all-purpose flour
- 1 cup of soft butter (room temperature)
- 1 ½ cup of granulated sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 2 teaspoons of butter extract
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- Pinch of salt
- Colourful sugar or sprinkles for rolling and decorating
Directions To Make Chewy Butter Cookies
- Cream together the butter and sugar. After mixing for 90 seconds add the egg and mix for an additional 90 seconds.
- Next, add the butter extract and vanilla, and blend well.
- Add salt, baking soda and baking powder and blend for an additional minute.
- At this point in the preparations I like to switch from a mixer to a mixing spoon.
- Add the flour and mix with a spoon until the dough is soft and smooth.
- Refrigerate for 30 minutes.
- Preheat the oven to 375 degrees (us) or 190 degrees (uk) and line a baking sheet with parchment paper or spray with cooking spray. Remember fan assisted ovens cook faster, so you can turn the heat down a little bit.
- Scoop out balls of dough and roll them in colourful sugar or sprinkles and place them 3” apart on the prepared cookie sheet.
- Bake for 12 to 14 minutes.
