Ingredients For Waffle Pops
For the Waffle Batter:
- 180g plain flour
- 2 tablespoons brown sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 large egg
- 230 mls of almond milk
- 240 mls vegetable oil
- 1 teaspoon vanilla extract
Ingredients for the Glaze:
- 120g icing sugar
- 2 tablespoons milk (more if needed)
- ½ teaspoon vanilla extract
- Pink food colouring (for decoration)
For the Chocolate Dip:
Melted chocolate chips
Other:
- Lollipop sticks or stiff skewers
- Sprinkles (optional)
Instructions:
1. Prepare the Waffle Batter:
In a large bowl, whisk together the flour, brown sugar, baking powder, and salt. Then in another bowl, combine the egg, almond milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix as this will spoil the mixture.

Divide the batter into separate bowls based on the number of colours you want to make. Add a few drops of food colouring to each bowl and mix until you have the colour you want.

2. Cook the Waffles:
Preheat your waffle maker according to its instructions. Then lightly grease the waffle maker if it needs it.For each waffle, pour a small amount of batter onto the hot waffle maker. Close the waffle maker and cook until golden brown (about 3-5 minutes, depending on your maker). Insert a stick while the batter is not fully cooked to ensure it is solid.

3. Make the Glaze:
In a bowl, mix together the Icing sugar and milk. Adjust the milk for your desired consistency. Divide the glaze into two small bowls. Add pink food colouring to one, and leave the other one plain.

4. Prepare the Chocolate Dip:
In a microwave-safe bowl, combine the chocolate chips. Microwave in 30-second intervals, stirring in between, until you have a smooth mixture. Some people add a little cooking oil to their chocolate to prevent it from going lumpy as it melts.
5. Assemble the Waffles:
Dip the top of each waffle lollipop into the chocolate dip, allowing any excess to drip off. Immediately drizzle or dip in the colored glaze, and top with sprinkles if desired. Use a spoon to drizzle pink and white glaze onto the waffles, have fun and create different designs!

6. Serve:
Arrange the waffle lollipops upright in a container or on a platter for a decorative presentation. Enjoy your colourful and delicious spring treat! These delightful waffle lollipops are not only visually appealing but also make a sweet treat perfect for the spring or summer season. Enjoy!
