1. Traditional Roast Lamb with Mint Sauce

A classic Easter dish, roast lamb is both hearty and elegant, making it the perfect centrepiece for your Easter table.

Ingredients:

  • 1 leg of lamb (around 2kg)
  • 4 cloves garlic, sliced
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

For the Mint Sauce:

  • 1 bunch fresh mint leaves, finely chopped
  • 2 tbsp white wine vinegar
  • 1 tbsp sugar
  • 4 tbsp hot water

Instructions:

  1. Preheat your oven to 200°C (180°C fan).
  2. Make small incisions in the lamb and insert garlic slices and rosemary sprigs.
  3. Rub the lamb with olive oil, salt, and pepper.
  4. Roast in the oven for 1 hour 30 minutes (adjust for preferred doneness).

  • 500g strong bread flour
  • 1 tsp salt
  • 2 tsp mixed spice

  • 1 sachet (7g) dried yeast
  • 300ml warm milk
  • 50g butter, melted
  • 1 egg
  • 100g dried fruit (e.g., raisins or currants)
  • 1 tbsp plain flour (for the cross)

Instructions:

  1. Mix the flour, salt, mixed spice, sugar, and yeast in a large bowl.
  2. Add the warm milk, melted butter, and egg. Knead until smooth.
  3. Fold in the dried fruit and let the dough rise for 1 hour.
  4. Divide the dough into small balls and shape into bunnies (use smaller pieces for ears).
  5. Place on a baking tray, cover, and let rise for another hour.
  6. Mix plain flour with water to form a paste, pipe crosses onto the buns, and bake at 200°C for 20 minutes.

  • 200g milk chocolate
  • 100g shredded wheat, crushed

Instructions:

  1. Melt the chocolate in a heatproof bowl over simmering water.
  2. Stir in the crushed shredded wheat until coated.
  3. Spoon the mixture into cupcake cases, shaping them into nest shapes.
  4. Add mini chocolate eggs to each nest and let them set in the fridge.
